Mix together:
1 butternut squash, peeled and chopped
2 large, tart apples, peeled and chopped
1/2 cup dried cranberries
1/4 cup maple syrup
1 teaspoon salt
Bake in a 9" x 12" pan for 40 min at 400 degrees.

Sweet Potatoes with Apples and Cranberries
1.) Preheat the oven to 400 degrees.
2.) Peel and chop 5-6 medium sweet potatoes and 1 large, tart apple.
3.) Toss them together with:
1/2 cup dried, sweetened cranberries
1/4 cup of water
1/4 cup of molasses
1 tablespoon of soy sauce
1 teaspoon Chili powder
1 teaspoon cinnamon
1/2 teaspoon liquid smoke
4.) Put the mixture in a baking pan (I used 9" x 13") covered with foil and bake for 35 minutes.
I thought this was delicious hot or cold.

Multigrain Butternut Squash Muffins
Ingredients:
1/4 cup cornmeal
1/3 cup rolled oats
1/2 cup whole what flour
1/2 cup all purpose flour
1/4 teaspoon each nutmeg and ground cloves
1/2 teaspoon each salt, ground ginger and cinnamon
1/2 cup dried cranberries
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Wet ingredients:
3/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup cooked butternut squash (either cook in the microwave or oven until very soft, and scoop out with a spoon.)
1/3 cup yogurt
1/4 cup apple cider

Cranberry Scones
- 1.25 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
2 tablespoons sugar
2 tablespoons vegetable oil
1 egg
1/4 cup milk
1/4 cup dried cranberries - Mix the wet and dry ingredients separately, then mix them together. Form a ball, place it on a non-stick baking pan and flatten it just a little and then use a knife to deeply score it into 6 pieces. Bake at 450 degrees for 10 minutes.
